East Texas Style Barbecue

Texas Style BBQ - $18-25 per person - 50 person minimum

We are now offering East Texas Style BBQ. This new menu option is available for private parties, weddings, wineries, and corporate events. Wineries have the option to take advantage of our pop-up service.  This includes a full menu featuring BBQ cuts like pork ribs and pork belly for the entree cooked over fruit woods.

East Texas Barbecuing is done in an enclosed smoker barbecue pit with long and slow cooking with either a nut or fruit wood (pecan, walnut, cherry, apple, etc.) providing the smoke. The temperature during the barbecuing is in a range of 190 degrees to 250 degrees and can take several hours (4 to 16 hours). This type of barbecuing produces a very flavorful, soft, moist product.

The Santa Maria style barbecue is done over Red or White Oak coals. This style produces a tri-tip with a nice “bark” on the outside and the perfect temperature on the inside.
